Easy Calzones from TLC's Pioneer Woman

Wow - today was a great day in our kitchen!  (Although, every time Elizabeth cooks, it's a great day in our kitchen!)

First of all, almost everything I'll be writing about here is food that my wife, Elizabeth has cooked. Some of the recipes are hers, some from magazines, TV shows, etc. Plus, I'll include a restaurant review, or two along the way, as well. Today's food experience came from the Food Network TV show Pioneer Woman.

Today, Elizabeth and I had a rather lazy start to our Saturday.  We didn't really do a whole lot around our condo, expect get caught up on TV.  (We're both just getting over being sick).  Most of the shows we record on our DVR come from the Food Network.  I love Restaurant Impossible!  (I'll talk more about that show another time).  One show we both like to watch in Pioneer Woman, hosted by Ree Drummond.  If you haven't seen the show, it features the home cooking and life of Ree and her family.  The Drummond family lives on very remote cattle ranch outside of Pawhuska, Oklahoma.  Ree got her start blogging about what it's like to life the life of a pioneer family.  (Homeschooling, cooking, etc).  The cooking portion has received the most attention - landing Ree several book deals and her own TV show.

On to the food - in the episode we watched today, Ree wanted to make a light dinner for her family.  Her husband and kids were working the hay fields all day and need a light and delicious dinner.  Ree decided to make one of my favorite foods - Calzones!  As Elizabeth and I watched Ree make dinner, we both thought to ourselves, "how great would this be for dinner tonight??"  Well - our thoughts turned to me heading to the grocery store.

Now, don't let the "Easy Calzone" name fool you.  There was a lot of prep that goes into cooking.  I bought frozen dinner rolls that we used for dough (great idea!).  We had to have those sit out for a while to thaw and begin to rise.  Then, Elizabeth took over in the kitchen.  I popped in a DVD - we watched the Thomas Crown Affair while Elizabeth cooked.  (Great flick!)  It took most of  the length of the movie to cook the food.  However, when Elizabeth was done cooking, the Calzones were wonderful!

The recipe calls for some of my favorite ingredients - mozzarella cheese, ricotta and Italian sausage!  It just so happened, Elizabeth had already made some killer marinara sauce earlier in the week.  Her marinara sauce was freshened up with a little more garlic (I love garlic!) and some fresh parsley!  The calzones with Elizabeth's marinara was excellent!
